Mexican! our new favourite for lunch

Alan has got us hooked on his Mexican delights!

Were always looking for new lunch ideas and our latest craze consits of Nachos, refried beans, chilli and burritos! Here's how we manage to make them in our humble kitchen with only a rice cooker and a microwave.

We serve these four dishes with salad, rice, tortilla chips and wraps. A wrap with all of the ingredients thrown in makes a delicious burrito.

Refried beans

- 1 can of refried beans
- 1 stock cube
- Dash of beer
- 2 cloves of garlic, chopped
- Half an onion, chopped finely
- Dash of olive oil

Put the garlic, onion and olive oil in a bowl and cook in the microwave until soft (about 2 mins). Then add the other ingredients and cook in the microwave until hot (2-4 mins)

Chilli

- Vegetables of your choice, chopped (we like peppers and courgettes)
- 1 onion, chopped
- 1 stock cube
- 1 Sachet of chilli flavour
- 2 cloves of garlic, chopped
- 1 can of copped tomatoes
- 1 can of kidney beans

Cook the garlic and onion in in the microwave in a little oil until soft (about 2 mins), add the other ingredients and cook for a while in the microwave (about 8-10 mins). This takes the longest so get it on first.

Salsa

- 2 tomatoes, chopped
- Half a Red chilli, chopped
- A little yellow pepper, chopped
- Red onion, chopped
- Half a Lime, juiced

Mix it all up with seasoning

Guacamole

- 1 avocado - Make sure you get a soft one!
- Half a lime, juiced
- A few twists of salt

Mash up the avocado and mix in the lime and salt.
